Worland's Taco Barn brings Laredo to Wyoming

A specialty of Tacos, Burritos and More is a handmade gordita stuffed with tamale meat and guacamole.

WORLAND – Virginia Garcia had always wanted to make and serve authentic Mexican food from her region of Laredo, when she finally realized her dream last year by opening a taco truck on Big Horn Avenue in Worland.

Soon, the business became bigger than the small truck, and required more than Garcia could handle on her own. This year, her daughter and son-in-law, Marion and Sergio Nieto stepped in and expanded the business, hired employees, and became partners to help run Tacos, Burritos and More, out of what is commonly called the "Taco Barn."

"We use all of my mom's recipes, and she and I prep the food every morning," said Marion, sitting in the shade of a picnic table, while customers line up for gorditas and northern-style tacos.

Marion explains that Mexican food has different influences, as her husband, from Mexico City, is used to food that is different from the food in the northern region of Mexico.

"In our gorditas for instance, we use cilantro and a fresh baked bread, which they don't have down in central or even southern Mexico," said Marion.

Currently, the taco kitchen is open only three days a week, as the family is busy raising children and working other jobs. Plans include changing from a Thursday-Saturday schedule, to Wednesday-Friday.

"We hope to stay open as far as we can into the winter," said Marion. "But you know how that goes around here."
