Winning Rhubarb Rhevival recipe adds mandarin oranges

DAILY NEWS/Karla Pomeroy Shelley Spence was all smiles after she won the 2018 Rhubarb Rhevival with her Mandarin-Rhubarb Crisp Saturday at the Washakie County Fair.

WORLAND - This year's winning Rhubarb Rhevival recipe added some mandarin oranges to the mix that delighted tasters during the people's choice voting Saturday at the Washakie County Fair.

The winning recipe was made by Shelley Spence. Spence said that she likes to experiment with new recipes at the Rhubarb Rhevival each year and this year was no exception.

She also coined a phrase from the "Andy Griffith" show character Clara Edwards in that she "went wild with allspice."


Second place with her bread was Sally Tibbs and third place was Raelene McMurray with her great-grandma's rhubarb crisp.

MANDARIN-RHUBARB CRISP

6 cups fresh rhubarb, chopped

1 ½ cups Wyoming Sugar sugar

5 tablespoons quick-cooking tapioca

1 teaspoon vanilla extract

1 teaspoon orange extract

1 15 ounce can mandarin oranges, drained

1 cup brown sugar, packed

1 cup oatmeal

½ cup flour

½ teaspoon salt

½ cup cold butter

Allspice

Preheat oven to 360 degrees. Mix rhubarb, sugar and tapioca in glass bowl; let stand 15 minutes. Stir in vanilla and orange extract; pour mixture into a greased 13x9-inch baking pan. Top with mandarin oranges.


Mix brown sugar, oatmeal, flour and salt in a bowl; cut in butter until crumbly. Sprinkle over last layer, sprinkle liberally with allspice.

Bake 40 minutes or until golden brown.

Refrigerate leftovers.
