Einkorn, emmer, and spelt are the ancestors of our modern wheat varieties and valued by consumers and chefs for their superior flavor and nutrition. For Wyoming farmers, they are another crop that may fit well into existing rotations and requires less water than malt barley. There is also some evidence that these grains need less fertilizer than modern wheat and barley, but its not conclusive....
